Wow, it’s been so long since I blogged! We went from a family of 3 to a family of 4 just after Christmas and that held up the whole blogging thing… Didn’t stop cooking new stuff though, so expect loads of new recipes over the next few days whilst I catch up! This is more of an idea than a recipe. Looked up a few slow cooker curries but they were all over-complicated so decided to just bung a load of curry-like stuff in and hope for the best. It was absolutely delicious so I will definitely make it again, but there’s definitely scope to alter the ingredients! Here is what I put in this time and it made a kind of tikka/ balti sort of flavour and served about 4-6.
400g stewing beef
4 potatoes, chopped into large chunks but not peeled
Curry paste (tikka, half a jar approx)
Peas (added almost at end
Lentils (quite a lot, tipped from jar)
2 stock cubes (beef)
Coconut milk (1 can)
Next time I might try using a can of tomatoes to replace some/ all the coconut milk.
The big revelation here was the lentils. The main problem with the slow cooker is it doesn’t cook things down so they stay watery, but the dried lentils soaked up a lot of this water so the curry had just the right texture straight from the slow cooker, and wasn’t even a little bit watery. I will be using this technique in my stews etc from now on, and was thinking I could also use pearl barley for the same purpose. And the lentils added a lot of goodness so it’s win-win really. This is in the permanent collection!
