Egg free mousse

Chris has found and adapted this recipe, but as he never remembers to blog anything I thought I might as well do it. It’s absolutely delicious and very easy, although hugely unhealthy and rammed with sugar. I actually used speculoos spread in place of the chocolate to make a speculoos mousse as per a suggestion on facebook. It was nice but probably too sickly, even for us! Will try an actual speculoos mousse recipe next time, but I can’t eat raw egg at the moment so had to improvise. However, try this with any type of chocolate (white is nice too but as the marshmallows come in pink and white bags the colour is a bit confusing!) it’s lovely mousse

75g mini marshmallows
30ml hot water
25g butter
100g dark chocolate
50g milk chocolate
150ml double cream
Splash vanilla

Melt marshmallows, water, butter and chocolate in a pan
Whisk cream and vanilla (ideally with electric whisk to save your arm)
Fold cream in. I panicked at this stage as the cream melted a bit from the heat, although I’d left it to cool a minute first. However, it was no problem that it’d melted a bit, it set perfectly.

I have a feeling the original recipe he copied was by nigella. This is halved so makes 2 ramekins full.

Balsamic blueberries

This is another that’s really just an idea… Came from good food magazine as I was looking for ideas for recipes to use up all the blueberries we’ve got… As they were on offer at morrisons. The original recipe is here. You don’t need to weigh or measure anything, just bung it all in! This sort of amount serves about 2. The taste of the blueberries is totally different when they’re cooked. Serve with ice cream or frozen yoghurt.

125g blueberries
1 tbsp balsamic vinegar
1 tbsp sugar
1 tbsp water

Put it all in a saucepan
Cook for 1-2 minutes, so the berries soften but don’t burst
Pour on ice cream to eat
