Pickled carrot salad

This went with bean burgers I made for tea, which are delicious and will definitely be blogged, but this is worthy of its own entry as I will definitely do it again, it’s delicious. I’m not a fan of raw carrot generally but this made it seem special! Inspired by a good food recipe

2 large carrots

1 tbsp sugar

Sprinkling of vinegar (generous) I used rice wine vinegar
Finely slice the carrots. I used the processor

Combine in a bowl with the other ingredients

Leave for about an hour to mix, stirring occasionally

Drain, and serve

Would suit a barbecue, burger etc
