Had these for breakfast, mega yummy! They were huge, totally filled the plate, but also really puffed up… You can actually make them whatever size you fancy but huge ones were really fun… Dread to think how many calories! We enjoyed these with maple syrup, golden syrup or honey. Both baby and pre- schooler loved them.
300g sr flour
1 tsp baking powder
1 tbsp caster sugar
2 medium eggs
1 tbsp maple syrup
300ml milk (I used skimmed but would have preferred semi or full fat, especially with feeding kids)
I just beat all the ingredients together in the food processor, as an all in one recipe. Seemed to work really well! The original is here and uses a much more complex method, but totally unnecessary if you have a processor!
In terms of cooking them, I used a frying pan and melted butter (with a tiny bit of oil which apparently helps prevent it from burning). I made 4 although recipe suggests 6. I spread 1/4 of my mixture on the pan. Was thick and huge, but that’s what these pancakes are like! Leave the pancake to cook, then when it forms bubbles on the side you can see, flip it over to let the other side cook.
You can keep them warm in the oven if you like, but it was really quick making them so I just handed them out as I cooked them.
Adding these to the permanent collection. Will use this as my basic recipe and add stuff like blueberries to it
