GBBO: Madeira cake

It’s back on tv, whoop whoop! And we are baking along again, whoop whoop! Whilst waiting to watch it later on catch up tv, here is last week’s bake along! Was yummy and I will definitely use this recipe again, potentially with alterations such as turning it into a lemon poppyseed cake with extra lemon (if wanted) and poppy seeds. Used a nigella lawson recipe from domestic goddess because she really does know what she’s talking about! Amused to find it was her mother-in-law’s recipe… Guess they aren’t probably on such great terms now, but it is a yummy recipe! Slight alterations to simplify the recipe!

240g butter

200g caster sugar (I did use caster, for the texture)

Grated zest and juice of 1 lemon

3 eggs

200g sr flour

100g plain flour

Cream butter and sugar

Add eggs one at a time

Mix in the rest of the flour and finally the lemon juice

Sprinkle with about 2 tbsp caster sugar (I forgot this)

Spoon into a loaf tin and bake for 1 hour or until a cake tester (knife!!!) comes put clean

Apparently it should have a big crack in the middle. Who knew?!
