Pasta with chicken, rocket and caramelised tomatoes

Last week I got one of those recipe boxes where they send you some recipes and all the Ingredients to cook them. It was a groupon and worked out pretty cheap, and the meals were massive! We found it a but boring in terms of recipes though… Fancy ingredients but that was all really. Our favourite was the courgette pasta, and our least favourite was this one. We probably wouldn’t bother cooking this again, but wanted to keep a rEncore of it anyway.

5g fresh rosemary

1 red onion

2 garlic cloves

200g pasta 

250g cherry tomatoes

2 chicken breasts

100g rocket (there was major overuse of garlic and rocket in these recipes)

1 lemon (oh, and overuse of lemon!)

20g Parmesan

Prep the vegetables and put into an ovenproof dish with oil. Roast for 10-12 mins

Cook the pasta

Drain it, reserving 80ml water

Cut the meat into 2cm pieces

Pan fry meat. Season and add a pinch of sugar (this was the best tip in the recipe. It’s a cheating way of making it brown nicely)

Mix the pasta, chicken and roasted veg, grate over the lemon zest, add some juice and garnish with rocket and parmesan
