Baked pumpkin

This is a great addition to my life. I never knew you could cook pumpkin whole! The idea came from good food a couple of months ago, and since I’ve mainly baked my pumpkins and used them as purée. The last one ended up full of water as it was a bit older, so you need to very carefully drain it

Cut top off pumpkin
Remove all seeds and membranes (this takes a while and is annoying but get as much out as you can as the membranes are quite wet so will affect the taste
Place lid back on and bake until a fork goes in easily and it feels cooked (just over an hour)
When it’s cooled a bit, the skin will peel off easily and you can blend into a purée with a stick blender and use in a variety of recipes. I’ve done pie and soup, and keen to also try a cheesecake from nigella, muffins from olive, and pancakes from nigella, which are planned for Sunday pudding 🙂
