Chickpea and coriander burgers

We will be having a lot more veggie food on account of how we no longer have a freezer so the meat won’t last from shopping day all week 😦 this was yummy and we are planning to have it again on Monday. You need some sort of nice roll, we used bits from a pain rustique as it was reduced in morrisons.

400g can chickpeas (annoyingly morrisons have reduced the pack size to 300g so I had to use a can and a bit)
Zest and juice of a lemon
1 tsp ground cumin
Small bunch chopped coriander
1 egg
100g breadcrumbs

Whizz up the ingredients in a food processor
Form 4 burgers and chill for at least 10 mins (so they don’t disintegrate in frying pan)
Heat oil in frying pan until hot and fry for approx 4 mins each side. Keep heat on medium so they don’t burn
Serve in a bun with lettuce/ cucumber/ salsa/ chutney/ onion/ chilli sauce. They are yummy 🙂
