Sicilian-Style tuna lasagne

Made this tonight from the latest good food magazine. It was delicious. Extremely healthy, really easy, and dead cheap. The magazine reckons 97p per serving, but as I buy my tuna on offer I reckon it’s even cheaper for me! And this serves 4 so you get a massive portion for your 565 calories and 34g fat!

Can chopped tomatoes
2 peppers (or 250g frozen peppers)
85g black olives (annoyingly I bought whole by accident and had to pit them which took ages) I used the best part of a whole jar
2 tsp cinnamon (didn’t have this so just used Italian herbs)
1 tbsp mixed Italian herbs (basil, oregano, marjoram etc)
2 cans tuna
200g cream cheese or creme fraiche (creme fraiche more expensive but cream cheese was tricky to spread and didn’t seem quite enough)
12 dried lasagne sheets (I buy value)
1 ball mozzarella

Heat the tomatoes, peppers, olives, herbs and cinnamon in a pan for 10 mins
Add tuna and season
Mix seasoning in with cream cheese
In a lasagne dish construct a 3 layer lasagne. Start with tuna sauce, then 4 sheets lasagne, then spread cream cheese
On top tear up the mozzarella
Bake at 200 for 35 mins

I would use creme fraiche as was hard to stop the top being crispy with limited cream cheese. Although we quite enjoyed the crispness!
