Spinach and chickpea curry

We used to eat a lot more vegetarian food but we got to the point where we just really weren’t eating enough meat. Now we seem to have gone the other way though so I’m trying to go back to 1-2 days vegetarian a week. This is delicious. Serve with rice and weightwatchers naan.

Serves four people for 204 calories each

2 tbsp mild curry paste
1 onion
2 cans chickpeas
1 can tomatoes
1 bag (250g) baby spinach (I buy normal sometimes, as it’s cheaper)
Squeeze of lemon juice (but not essential if you haven’t got any in)

Chop onion and fry with the curry paste
Add the tomatoes and cook for 5 mins
Add chickpeas and cook for 1 more minute
Take off the heat and add spinach, stir and let it wilt
Squeeze in the lemon juice
Serve with naan and rice
