Sweet sesame chilli chicken

This was yummy for tea! Same idea as Monday’s lemon chicken (we’ve had chicken breasts three days in a row as morrisons have a daft offer on chicken so breasts are cheaper even than thighs but you have to buy two packs), just a dead easy stir fry. We served this with noodles and tomatoes. The recipe asks for Pak choi but morrisons seem not to be selling this at the moment, so used sugar snap peas, but these worked well anyway. Very good for you, as only 277 calories and 10g fat, not including the noodles, but these are under 200 calories anyway. In the permanent collection! This comes from the latest good food magazine.

2 tbsp oil (I probably didn’t use this much but used a fair bit as it was a stir fry)
1 large onion, chopped
3 garlic cloves, crushed
5cm ginger, grated
2 chicken breasts
300g Pak choi (or sugar snaps!)
2 tbsp sesame seeds

2 tsp cornflour
1 tbsp soy sauce
3 tbsp sweet chilli sauce
1 tbsp lemon juice

Heat oil and stir fry onion for 5 mins (I added salt as apparently this helps the onion not to burn)
Add rest of stir fry ingredients and stir fry for 5+ mins! until chicken is cooked through
Mix the sauce ingredients in a jug
Pour sauce onto stir fry and cook for another minute
Serve with noodles/ rice etc

I have actually halved the amount of chicken but left all the rest of the ingredients the same, so mine will be slightly more calories, but nothing drastic!
