Chocolate cherry cupcakes

These were amazing! I was drawn to them because they use almost a whole jar of jam in the cake batter, which is pretty unusual. The original recipe is by nigella, from her domestic goddess cookbook, and it’s definitely joining the permanent collection.

125g butter
100g dark chocolate
300g morello cherry jam (almost a full jar… Morrisons didn’t stock this, but I was surprised to find it in our local tesco express, it cost about £1.60)
150g caster sugar
Pinch salt
2 eggs, beaten
150g sr flour

Icing
100g dark chocolate
100ml double cream
12 glacé cherries

Melt the butter in a saucepan
When nearly melted break the chocolate in and leave on heat for a moment to soften
Remove from heat and stir until smooth and melted
Add the cherry jam, sugar, salt and eggs and stir
When all mixed in, stir in the flour
Pour into 12 muffin cases in a tray (you need muffin cases, not little Fairy ones)
Bake for 25 mins

For the icing…
Put the cream and broken chocolate into a saucepan
Bring to boil, then remove from heat
Whisk until thick and smooth
Ice the cupcakes when cool and put a cherry on each

For me this icing was yummy but a little runny, perhaps use slightly less cream
Had a near crisis making these… After melting the chocolate I forgot to turn the hob off and went outside, leaving the tray of cooling cupcakes on top of the lit hob… No idea how but luckily no disaster or fire… Just a couple of inedible rock had cupcakes. So, erm, don’t do that! But do try these, they are yummy!

A little note: get these out quite soon, they tend to be very sticky due to the jam. Next time I’m going to try them as a loaf cake.
