I made this after our strawberry picking day when I had a ton of strawberries to use up. It didn’t actually use loads of them but it was a yummy and unusual recipe and I’d definitely make it again. The original recipe is from good food online, here.
25g caster sugar
140g mini marshmallows
200ml double cream
Put the strawberries, water and sugar in a pan
Cook over a medium heat until the strawberries are soft enough to mash, about 3 mins
Take off the heat and mash the strawberries
Stir in the marshmallows until they melt
Whip the cream
When the marshmallow mixture has cooled a little, fold the cream in
Pour into your serving dishes. I think if you used ramekins you would make more than 4, maybe about 6. I used 2 large bowls I bought for making French-style rarebit, to make 4+ portions
Chill for at least 2 hours
This reckons to serve 4 at just over 400 calories each. I found it only lasted just over a day and then developed a crust on the top so make it when you want to eat it.
