Sausage rolls

Not actually cooked this myself yet, but want to blog it before I lose the recipe, which a friend texted to me. Tried these at Christmas at a friend’s party, and asked for the recipe to make them for this weekend’s party but never actually got round to it! I ate tons of these, the mustard made them absolutely delicious.

250g puff pastry
250g sausage meat
1 tsp Dijon mustard
1 tsp wholegrain mustard
1 egg yolk whisked with 1 tbsp milk (sounds like a faff, but I’m terrible at egg washes so might try t like this!)

Roll pastry to size of a4 sheet of paper
Trim the long edges and cut into 2 finger-long strips, about 8cm wide
Divide the sausage meat in 2 and roll int thin cylinders a little fatter than a chipolata
Lay these on the length of the pastry
Blend the mustards together and smear down the length of the sausage meat
Paint one long edge of each roll with egg wash
Fold the unpainted edge over the sausage meat, then the painted bit and press together
Score the tops with diagonal slits 1cm apart and paint with egg wash
Bake for 25-30 mins
Cool for 15 mins then cut into slices

Pretty complex instructions! May simplify when I’ve tried them! Can’t credit the recipe as it was just texted to me.
