Apple fruit cake

I’ve spent this evening making this for a party on Saturday. Made a couple of cupcakes so we could taste it and it was very tasty. It’s also very moist, so to be honest, unless you have a really good christmas cake recipe, you might as well just make this one! Most people’s christmas cakes are pretty dry I find, whereas this is always moist and delicious! Today I’m making it as a birthday cake, because it can be made in advance and wrapped in foil for a week, so perfect for preparing in advance when you’ve got other things to be doing nearer the time (as well as actually icing it!)

200g butter
200g dark muscovado (I used dark brown as ran out)
3 eggs
1 tbsp black treacle (not much but important to taste)
200g sr flour
1 tsp baking powder
2 tsp mixed spice (had to go to the shop for this half way through!)

300g mixed raisins/ sultanas
2 grated apples

Mix the first set of ingredients in a bowl, ideally with an electric whisk
Stir in the other 2 ingredients
Grease and line a round tin (spray oil)
Pour the mixture in
Bake for 50 mins to 1 hour
Ice if required
