Easy Thai prawn curry

We really enjoyed this and would definitely eat it again… However, cost-wise buying raw prawns is not really economical. It costs £3 for a packet in morrisons, which was enough to make this for 2 people, but you aren’t getting as much protein etc from a pack of these as you would for example from the pork tenderloin version. On the other hand, that curry (still my favourite) requires a few extra ingredients that this one doesn’t need. Recipe is from good food, here. but I just made it for 2 people. Used more coconut milk than the original recipe so wouldn’t be as good for you. I froze the extra coconut milk… Hope that works ok, not sure yet as haven’t tried to use it!

1 Chopped onion (small)
1 tsp grated ginger (I grated from frozen)
1 tsp Thai red curry paste
1/2 can chopped tomatoes
50g coconut milk (I used half a sachet of the morrisons one)
200g raw prawns (frozen would be cheaper actually. I only had about 125g I think)
Coriander, if possible

Fry onion and ginger in spray oil until softened
Add the curry paste and stir around
Add tomatoes and coconut cream
Bring to the boil and simmer for 5 mins
Add the prawns and cook for about 5 mins (I thought this would be stressful, but they cooked quickly. I didn’t want to take any chances so took one out and chopped into it to be sure)
Eat with boiled rice and veg
