Teriyaki salmon parcels- toddler cooking!

This is another recipe from the Maisie makes series in good food magazine. It’s the current edition, and panther absolutely loved making it as dinner for the whole family! The general idea of a child preparing something to be ovened in a foil parcel is great anyway, because she can prepare it to cook without actually touching any heat. Panther enjoyed looking at the pictures and working out what to do, but you can’t do that here sadly.

2 tbsp soy sauce
1 tbsp honey
1 garlic clove, crushed
1 tbsp Mirin, optional (we had it so used it)

1/2 head brocoli (or a pack of tenderstem if you can afford it!)
4x pieces of salmon (recipe said 100g pieces but I used smaller frozen ones)
1 small piece of ginger, cut into matchsticks

Mix the top 4 ingredients in a bowl to make the sauce
Cut some squares of foil
Fill each parcel. Spray oil, then brocoli (chopped quite small), then salmon
Spoon over the sauce and sprinkle the ginger matchsticks on
Close up the parcels, and cook at 200 for 15 mins

I served with ginger and sesame green beans (steam the beans then fry in garlic, ginger and sesame seeds) and rice. Panther loved it!
