Cajun chicken and pineapple burger

This was delicious. Served with jacket wedges (about 1 jacket potato each, cut into wedges, sprayed with oil, seasoned with chilli and baked for 45-55 mins). Used frozen chicken so had 2 spare breasts so used the same basic ingredients today to make a chicken wrap which was also totally delicious! (Serves 4)

4 chicken breasts
2 tbsp Cajun
4 pineapple rings (this is how many you get in the can)
50g grated cheddar
2 tbsp sour cream
4 burger buns
Lettuce leaves
Red onion

Sprinkle the Cajun over the chicken, season, and spray some oil
Oven for 20-30 mins
Top with a pineapple ring and some grated cheese and continue cooking until melted
Fry the red onion if you want (I did)
Spread sour cream on bun and top with lettuce, chicken and pineapple and onion, and enjoy!
