This is from the latest good food magazine and makes a lovely healthy breakfast, high in protein and with one portion of fruit. I’d never had an omelette with sweet topping but it was great. I used a handful of frozen berries, defrosted overnight. I wouldn’t eat this on a day I needed to exercise in the morning as there are not enough carbs to keep me going, but it kept me full until lunchtime today.
1 tbsp skimmed milk
3 pinches cinnamon (this ran out so trying ginger next time)
100g cottage cheese
Handful frozen berries
Beat the egg, cinnamon and milk in a bowl.
Heat some spray oil in a pan
Tip the egg in and make a one egg omelette. Ideally don’t fold it
When it’s cooked, spread 100g cottage cheese onto it and scatter your berries over it
