This is a great idea. It’s from the latest good food magazine, and works really well, as do all the other recipes in the series, because you have step by step instructions aimed at children and pictures of a little girl cooking, which appeals to Samantha! Samantha was super proud to have cooked an actual meal for all of us… Hoping she will make it again for us next week! I’m copying the recipe exactly although the only thing I actually weighed was the pasta, all the other measurements were guesswork. Serves 4-6 although quite calorific and fatty, if shared amongst 6 it’s 540 calories and 34g fat!
150g green beans
300g new potatoes
300g pasta, I used a coloured pack s Samantha was intrigued by it!
Large bunch basil
50g pine nuts
2 garlic cloves (would reduce to 1 next time)
100 ml olive oil
Pick the basil leaves (a great task for a three year old!)
Toast the pine nuts in a dry pan
Tip the pesto ingredients into a mini food processor and lend
Chop the beans (we did this together and also chopped the potatoes to be sure they cooked)
Boil the potatoes for 3 mins.
Add the pasta and boil for 5 more mins
Add the peas and boil for 3 more mins
Drain, tip into a large bowl and stir in the pesto
