Liked this loads better than stewed, which was the general consensus on the good food website. Would follow the recipe more exactly next time though. Mainly I didn’t cover it in foil, because I did it from memory. Served with ice cream and was lovely. More exact recipe here.
Used a pack of rhubarb as sold in morrisons. It was ready chopped but if not you’d need to trim and chop it
Spread it out in your baking dish
Sprinkle with sugar
Cover with foil and roast in oven at 200 for 15 mins
Uncover, shake up, and roast for another 5 mins
