Italian roasted veg couscous

Looked at good food website for inspiration but this is essentially my own recipe. I am generally terrible at making tasty couscous but this was really nice. Wanted to use giant couscous but wasn’t stocked in morrisons so will need to make a trip elsewhere… Actually may try coop tomorrow as they sometimes have stuff like that. This was inspired by a couscous pot at the gym… It cost £1.95 so a bit expensive for me, but I liked the idea of it as a post-gym snack. They topped it with rocket.

Couscous (250g but approx)
Pack cherry tomatoes
Half- whole red onion
Spray oil
Olive oil
Italian herbs
Olives
Lemon juice
Seasoning
Feta (chopped and sprinkled on top when serving)

Make couscous as per instructions on pack (top wit boiling water, cover and leave) I used olive oil. It too
Chop tomatoes and onion and roast for about 30 mins, with spray oil and seasoning
Mix all ingredients together

Makes about 3-4 lunch portions, guess about 6 snack ones
