Lemon chicken

This is from good food magazine in February, but I’ve been waiting to cook it for weeks because of the hob situation! This is definitely on the permanent collection. Everybody including panther loved it.

Vegetable oil (I used spray oil)
3 skinless chicken breasts (approx)
1/2 tsp five spice
2 tbsp plain flour
Thumb sized piece of ginger. I chopped it but it should have been shredded
250g sugar snap peas
2 spring onions, sliced
1 lemon, thinly sliced
2 lemons, zested and juiced
1 tbsp soy sauce
2 tbsp liquid stock (as I don’t have this, I added a stock cube and a splash of boiling water
2 tbsp honey
2 tsp cornflour

Mix the sauce ingredients together
(I was a bit lazy with this recipe, this is my simpler way)
Fry the chicken, mixed with five spice and flour
Add the ginger and fry for 1 min
Add the sugar snaps, then lemon slices and sauce
Toss for 2-3 mins until cooked through
Sprinkle with the spring onions and serve with rice

308 calories and 10g fat, so very good for you. Serves 4
