Having a little break while Chris in the loo and Samantha is in bed. Christmas is tiring! We had an Indian feast for date night on the 23rd December and finished it off for tea on Christmas Eve instead of our more traditional buffet! Tried out Rachel Allen’s recipe for mango lassi for a drink to go with it, and this is a definite staple. Altered it slightly the second time I made it by upping the amount of cardamom. Also changed from fresh to tinned mango, as it’s about the same cost and loads easier, so wouldn’t bother preparing a fresh one!
Seeds from 3-4 pods cardamom
100ml milk (I used skimmed and it was fine)
1 tin mango
2 tbsp caster sugar
Blend all the ingredients together.
Serve in a glass with a straw. Will make 3 small glasses.
