Proper chilli

On Thursdays panther and I go swimming at 5 and so get home quite late. Well, we get home at half six, but often I am too lazy to cook dinner and we end up eating at morissons. Which is not a bad thing in itself as we like eating in morissons and it only costs £4.50 for us both. However, it’s always good to cook properly, so this week I tried making Thursday dinner in the slow cooker! This forced us to come home as it was cooked… You have to be a truly rubbish mum to take your child out for tea because you can’t be bothered to serve what you’ve cooked…
Anyway, I was really pleased with the results. In fact so pleased it’s on the menu for this week as well! The original recipe was from good food but I’ve altered it to suit packet sizes at morrisons. It served 2 adults and a child which rice, then made 4 burritos, and there were then 2 good sized portions left. So it works out pretty cheap!

1 large onion
2 garlic cloves
1 tbsp chilli powder
2 tsp ground cumin
2 tsp dried oregano
675g minced beef
1 can tomatoes
2 beef stock cubes
7 sundried tomatoes (these didn’t add much to my mind, might not bother next time)
2 cans red kidney beans

Brown the mince and onion in a pan. This is essential as the beef that hadn’t been browned took on no colour in the slow cooker, so was a bit weird to eat
Tp everything into the slow cooker and cook on slow for a full day. You can’t get much easier than that!
