Pasta arrabiata

We had this for lunch about 4 days in a row when I first got back for hospital, because it’s dead easy and has a portion of veg, and few calories. Tried to make it yesterday for lunch and forgot that it includes garlic. Ended up with a totally tasteless lunch… Basically pasta with a tin of tomatoes, boo! But done properly this is totally delicious. Cook it for as long as you can, but if you only have 10 mins it’s still delicious. Serves 2-3

2-4 cloves garlic (what I left out!)
Olive oil
1 tin tomatoes
Chilli flakes (don’t put too many in until you’ve tasted it, it can get very hot!)

Crush the garlic and fry in a little oil
Add the tomatoes and chilli flakes and simmer for as long as you have

Chris added very finely chopped red pepper when he made this, which made it even more delicious.
