This is my own recipe for a super- easy soup that is cheap, easy and healthy! It is also delicious, and Chris thinks it is his favourite of all the soups we eat!
2 cans butter beans
About half a jar of pesto, maybe a bit less
Big squeeze of tomato purée
900 ml stock
Boil everything together for 5 mins
Ladle out a few butter beans to keep whole
Blend the res of the soup
Put the other butter beans back in and season if required. It may not be with this one I find
I have made this with canned tomatoes when I felt we were in need of extra veg portions. It was ok but a bit diluted so less tasty. If you cook it as above it serves abut 4 but with big bowlfuls.
