This is a great cheat! You can use pesto to flavour any green veg based soup, so you can make a tasty soup even with not much in! I’ve used broccoli and peas and they both work really well! A big bag of frozen peas or a couple of florets of broccoli work well. Next time I plan to use frozen broccoli I bought for something else!
Ideally start by frying an onion and a potato. If you don’t have an onion the soup will need more seasoning for flavour. The potato thickens it
Boil your veg, just covered in stock. If using the potato, which basically just thickens the soup, it will need long enough to cook that
Add pesto, normally about half a jar
Blend. You could add cream or similar if you had some
This type of soup needs plenty of seasoning as it has so few ingredients!
This makes you look like a domestic goddess for whipping up a meal in minutes! We normally serve it with some nice bread for a weekend lunch.
