Sesame peanut noodles

This is one of the recipes from nigella express that I’ve been meaning to try for years! Her long complex list of ingredients ways put me off, along with the fact she makes it to serve 8 and I know I’d just end up picking at it from the fridge. This is altered a lot from the original recipe and serves 1, it’s delicious!

Salad
1 nest noodles, cooked
Sesame seeds
Mix of veg, 2-3 portions, e.g. Onion, tomato, cucumber, sweetcorn, peas, mange tout, sugar snap peas, pepper

Dressing
A small teaspoon of each, or to taste
Peanut butter
Lime juice (from bottle)
Sweet chilli sauce
Soy sauce
Garlic (I used a sprinkle of granules, which worked well. Don’t normally have these but they worked out cheaper in coop than buying a bulb of garlic!)
Dried coriander

Mix the chopped salad with cooked noodles and sesame seeds
Whisk the dressing in a bowl with a fork, to blend peanut butter in
Mix dressing into salad.

Serve it’s great as a picnic lunch.
